Indian Cabbage Soup
Ingredients:
- 1 pound cabbage, chopped
- 2 onions, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- dash salt and pepper to taste
- dash hot sauce, to taste (optional)
- fresh chopped cilantro
Directions:
- Combine all ingredients except cilantro in a large saucepan.
- Allow to simmer for at least 20 minutes.
- Transfer half of the soup to a blender or food processor and process until smooth. Recombine the soup and reheat as needed.
- Stir in cilantro and add additional salt, hot sauce (optional), to taste.
